Not Your Ordinary Nachos

We love food. We love Mexican food. We love nachos. We especially love these nachos. You will, too. On to the recipe…

Ingredients:
One can of Amy’s Medium Chili
1/2 of a yellow onion, diced
1/2 cup shredded vegan cheddar cheese (I used almond cheese)
about 1/2 bag blue corn tortilla chips (or yellow)
1 jalapeno pepper, diced (optional)

Directions
1. Preheat oven to 400 degrees. I use a large round plate for this, that way I don’t have to transfer to another plate for serving, but you can use a cookie sheet. Arrange tortilla chips in a single layer, then spoon some of the chili over the first layer, sprinkle some onions and cheese (and jalepeno’s if using), then add another layer of chips a little smaller around than the first, add more chili, cheese, onions, etc. creating a sort of “nacho pyramid.” Do this until you run out of chili.
2. Bake for about 10-12 minutes, or until cheese melts.
3. Serve with Tofutti’s Sour Supreme, guacamole, and fresh salsa!

Simple, delicious, fun!  Makes a great appetizer for when you have guests over for dinner, a filling snack for game night, or whenever. Serve with a side of brown rice and a green salad to make it a meal for 2. I have served this to non-vegetarian friends and they cleaned the plate! It’s a crowd pleaser!

  1. This sounds very yummy! I do love nachos because you can never go wrong. I like putting a lot of stuff together and calling it dinner. That just what nachos are!

  3. Looks tasty, reminds me a lot of the nacho’s at Real Food Daily here in Santa Monica, but they use typically grilled seitan in their topping – which is PHENOMENAL.
